Story
A decaf so sweet and tasty, it fooled our founder and certified Q-grader, Poul, on the cupping table.
The decaffeination process for Las Serranias employs a derivative from sugar-cane known as Ethel Acetate. The result is an amazingly sweet and clean tasting decaf that retains the fruit and acidity found in this amazing coffee. Other decafs can have an unpleasant flat or dirty characteristic, but this one remains clean, sweet and tasty.
Ethyl Acetate is found naturally in many fruits and vegetables and even regular roasted coffee. It's perfectly safe to consume and its use is permitted in Canada, the US and Europe as a decaffeinating substance or a food additive with no restrictions whatsoever.
The sugar-cane or Ethyl Acetate method combines water and Ethyl Acetate to gently extract caffeine from the coffee beans without pressure or excessive heat, which maintains the natural structure of the green coffee bean cells. This method is considered better for roasting as it allows for more aroma and flavour to shine through in the cup.
