Roasting La Joya to a City + roast make a wonderfully bright brew with a medium body and a crisp lingering apple aftertaste. When taken to a Full City roast, La Joya’s clean, tart acidity is slightly subdued and the full-bodied potential starts to shine. The combination of sharp acidity and full body in this Costa makes a wonderful single origin espresso, as seen at the Prairie Regional Barista Championship where our own Ben Put won first place pulling this delicious coffee!
Roaster’s Tip: The La Joya’s moisture content is moderately high. In order to achieve ample dehydration of your beans, aim for a slow ramp up to first crack.
Story
We discovered this small family operation in the Tarrazu region when Poul visited the area in November of 2010. Edwin Alvarado and his family live in the small town of Leon Cortes and they have named their mill La Joya which translates into english as "the jewel." This coffee was fully washed in their tiny micro mill and dried on african beds. The parchment was pristine. The family takes great pride in the coffee, and are very excited that Transcend has purchased it. This caturra is a solid coffee, especially for its debut, and we are confident that the coffee will improve with each year.
