This natural pulped ‘honey processed’ Costa Rican is wonderfully complex. With each level of roast the coffee is transformed showing an array of fruity notes. Lighter City + roasts showcase crisp, sharp citrus driven acidity, while when taken darker into Full City the acidity is transformed into a malic acid driven cup (think apple and pear).
Roaster’s Tip: When roasting the Genesis we recommend a long and slow ramp up to first crack. This will allow for ample dehydration of the bean, which in turn will allow all the unique fruit to shine!
Story
The coffee lovingly produced by Oscar and Olga Mendez on the Genesis farm is not a certified organic coffee. It is far beyond that. This coffee is akin to a biodynamic wine, in that the Mendez's are very in touch with their small coffee farm. They don't produce a lot of coffee. In fact, Transcend has purchased most of their production this year. As the photo below shows, the farm is not arranged in typical fashion. When Poul met with Oscar at the farm, Oscar was very proud of the fact that the coffee was allowed to grow almost "free range". The plants are unusually spaced and growing in and among them are all kinds of flowers and other trees. No chemicals are used on this farm and the trees are allowed to grow naturally. Oscar is certain that the influence of the numerous hibiscus flowers scattered on the farm have a direct influence on the aromatic characteristic of his coffee. He may very well be right, as this coffee is intensely floral in its aroma, and has very delicate citrus acidity. It is a very unique offering from Costa Rica, and one which we hope we can continue to offer for years to come.
