Roasting guide for Guatemalan coffees
Guatemalan coffees are known for their complexity and rich acidity, with spiced fruit undertones. Our Guatemalan offering is just that. Medium bodied cup with a crisp citrus acidity, chocolaty richness and lovely notes of spice.
Finca Vista Hermosa- la Vega gets its lovely acidity and medium body from its processing. It is a washed coffee, which means the skin of the coffee cherry is lowly stripped off layer by layer. Guatemalan coffee beans can offer a wonderful high note to an espresso blend. Finca Vista Hermosa currently adds the lively notes to our Organic Espresso Blend.
Roaster’s Tip: As the Finca Vista Hermosa has a high moisture content, experiment with starting your roast at a hotter temperature. This will alleviate lag experienced during the dehydration of the bean and allow you to reach first crack at the desired time.

Finca Vista Hermosa is a legacy of three generations of coffee lovers who have poured their hearts into the rich land of Huehuetenango, Guatemala. Because it is situated in the highlands, Huehuetenango coffees are among the more coveted coffees of altitude from Guatemala. The family plantation is located in Agua Dulce, Huehuetenango in northwest Guatemala. Finca Vista Hermosa is ecologically sound and healthy, a model for many shade grown and organic plantations.
Finca Vista Hermosa runs a good model for being both environmentally and socially responsible for a farm in the region, as their land is very steep. Edwin says that they actually have more shade than he'd like in some areas for the sake of errosion prevention.
They don't use any herbicides, pesticides or fungicides which is what Rainforest Alliance certification is looking for and they meet all other requirements, although are not currenty certified by any body as of yet.

Delicious fruitiness even out of the popcorn popper

This was my delicious morning surprise - the most "fruity" cup I have had in a long time. Roasted in a popcorn popper to end of first crack. Brewed in the technivorm - oops, forgot to open the flow from the basket for the first 3 or 4 minutes - a happy accident because the results are fantastic.
